Baffoe grew up near the former West German capital of Bonn and joined the youth academy of 1. FC Koln where he made his professional debut at eighteen years, helping them win the DFB-Pokal and the Bundesliga title the following year.
He then moved to Fortuna Dusseldorf where he spent five seasons and continues playing at a high level in the Bundesliga.
Baffoe then moved to France to join FC Metz where he spent two seasons with the club, helping them win the Coupe de la Ligue in 1996.
On leaving Metz, he had spells with OGC Nice, Hong Kong First Division League club South China AA and Venezuela Primera Division club Caracas FC before retiring from professional football in 1999.
Internationally, Baffoe represented the Ghana national team for three years, making 16 appearances and scoring two goals.
